Flaky Not Flaky introduces sconuts to Atlanta

First there were doughnuts, then cronuts, and now . . . sconuts? Husband-and-wife team Miguel and Anna Caraballo invented this sweet fluffy treat as a happy mistake. Owners of Flaky Not Flaky bakery and chocolates, they were intent on developing a less dense and crumbly scone recipe. What they came up with is a cute name for a product that sounds like a gimmick but is quite tasty. “Our traditional scones got crumbly,” Miguel Caraballo says. “We changed the dough to make it lighter—something you didn’t need clotted cream to get down—and people really took to it.”

That was 2022. Today, the Caraballos sell sconuts in flavors like vanilla bean, apple crumble, strawberry brie, and chocolate peanut at festivals and farmer’s markets around Atlanta, as well as online for pickup and delivery. They’re opening a brick-and-mortar location in Truist Plaza downtown (303 Peachtree Street) this summer. “We wanted to centralize our operations and have a place to call home,” Caraballo says.

There, Flaky Not Flaky will offer 12 varieties of sconuts baked fresh daily, along with cakes (think champagne and cream and fudgy chocolate brownie), chocolate bars, bonbons, barks, and chocolate turtles. There will be five flavors of gelato and one sorbetto. These can be purchased by the scoop or used in custom sconuts milkshakes or lemonade floats.

Savory options include a brie-and-roasted-apple grilled cheese, avocado and tomato sandwich, and prosciutto, lettuce, and tomato with garlic aioli. All will be served on house-made croissants. Expect sausage, cheddar and herb, and parmesan puffed pastries, and La Colombe coffee drinks to wash it down. Though this location will be a food stall, there will be a chef’s table in the kitchen, where customers can watch the bakers in action…
